My story

emily about to eat broccoli sprouts

I was a fussy eater

Now look at me eating broccoli sprouts!!

My father had Multiple Sclerosis for 10 years before he passed away. My Greek grandmother, developed late-onset insulin-dependent diabetes & my husband has Ulcerative Colitis. So, I have had my share of personal experiences with loved ones having long term health conditions that affect everyday life and pleasure.

Being a fussy eater myself, I have also been impacted by long-term intestinal discomforts & irregular problematic cycles along the way. I never knew then to take my symptoms as signs and I could never have guessed how much food and drink mattered.

I started considering nutrition might be important (!) when I had children in my 30s, then my husband recovered from a long-term flare up by adopting the Specific Carbohydrate Diet (SCD) we had read about. With the help of a lovely nutritionist in Dublin, we adapted our meals and lifestyle to promote his healing and we achieved just that, and may I add our new lifestyle is still serving both himself and me very well and & I believe our children will be stronger for the exposure they are getting to it!

…I have often wondered if my father’s trajectory would have been different if we knew then what I know now…*

SO, because of these 2 parallel experiences of chronic conditions going one way and another just a couple of decades apart, I am on a mission to help each person I work with to understand what they can control with regards to their health status so that it is not all left to their medical care team and they too can participate in their health improvement.

We are currently living in a society where we are totally dependent on what our medical professional tells us to do when actually if we know to investigate a little, if we understand how certain mechanisms work within us, we can take more ownership of and achieve better results in the long run.

I believe we can create a life that doesn’t support disease. With the proper tools to hand we don’t have to live in a restricted manor and we can enjoy life to the fullest.

You have more control over your health outcome than you think!

So, don’t give in, thinking there is nothing you can do about your condition, learn more about it and modify the things that are in your control NOW. You can be sure there will always be something you can do about it and it will make a difference!

*Dr Terry Wahls, who really inspires me, suffered from the same type of progressive Multiple Sclerosis as my father during the same period as my father, and yet she eventually got back on to her bike just 4months before my father passed away from his condition. Dr Terry Wahls is still going strong and helping millions of people, it is inspirational.
