(gluten free, dairy free, low carb, paleo, SCD)

 
 
 

The ultimate alternative crackers, ready in no time, once you get used to the recipe, do give it a go!

These have been great for us for something to have with a piece of cheese, to scoop up some guacamole, and on picnics in gluten free situations, as we don’t often buy ready-made GF breads. Children like them usually, but adults love them I have found, so I’m delighted we came across this recipe in the early days of converting our average family diet to follow the SCD (Specific Carbohydrate Diet) standards. Now all of our friends enjoy them and there are no down sides to eating them!

 

Ingredients

2 cups (192gr) almond flour (also known as ground almonds, found in store or grind your almonds!)

½ tsp sea salt

1 large egg

1 tbsp olive oil (or butter)

extra salt & pepper/ oregano /chili flakes to sprinkle on top of the crackers

 

 

Preparation (under 20mins)

1.       Put flour & salt in a bowl and blend with a spoon

2.       Add the egg & oil and blend again (mixing spoon can do the job nicely, you might need to add hands towards the end), shape the mixture into 2 balls of dough

3.       Place each ball on a non-stick baking paper, place a piece of baking paper on top and roll the dough into a thin layer, not paper thin but close

4.       Score the crackers with a pizza cutter and sprinkle extra sea salt and any other spice you want on top  (I make one tray salt and pepper and the other salt and chili flakes)

5.       Bake in the oven at 180C for about 10mins or until they start to lightly brown at the edges

6.       Let them cool down for a few mins, then break them apart into crackers

7.       Store in a sealed container, for up to 3-4 days

 

Makes about 30 crackers
